Known around here as the wine that almost wasn't! After 3 years in the test lab trying to make a quality wine from cultivated blueberries and never being satisfied with the flavours, we almost gave up. Then, we realized our mistake.
NOW crafted from wild blueberries hand-gathered in Northern Ontario, the flavours are outstanding. Our only mistake was not making very much!
Blueberry Wine is an excellent main course accompaniment or digestif, and pairs wonderfuly with rabbit, pork, or wild game (although its robust flavour stands up well to most meat dishes).
